Confetti Salsa Recipe

We decided to include vegan recipes! After many years of cooking and being asked for vegan recipes and kinda including them on our old blog, but not really, we did a poll and 95% of you said you WANTED vegan recipes on ig stories! So, I hear ya! I am going to start off with easy-to-do while traveling recipes that are quick with easy-to-find ingredients. I really hope you enjoy! We don’t drink wine. We aren’t cheese people. We love coffee, but are far from coffee snobs. But salsa, we can talk about salsa and critique it all day long. This confetti salsa recipe is definitely a play on aji picante, which is technically a hot sauce. Joey is very into vinegar, so I wanted to come up with something that filled his vinegar cravings, was scoop able by chip, but was also bearable for me. Sometimes I will eat is, as is, with him, and sometime we mix it with traditional salsa for a more mild kick.

You don’t need very much! The photo above is it, and just add a pinch of sugar to mellow out the vinegar punch if you would like. You also only need one jar to store it in the fridge (we suggest over night before you try it!) and a hand pulser or small food processor to blend it all up.

1 batch of cilantro de-stemmed

2 medium carrots cleaned and de-stemmed

2 shallots pealed

2 large cloves of garlic, pealed

3 spicy peppers of your choice (jalapeño, chili, etc) and de-stemmed

1 cup of white vinegar

pinch of sugar

Pulse each ingredient separately a few times until you get your desired size and consistency. See the photos below for our favorite way to do it.

Add all the pulsed vegetables to the jar you are using to store the salsa in and then pour in the vinegar and add your pinch of sugar! The cilantro will float to the top, so make sure to shake your jar before you use it!

Enjoy! Don’t forget to try it mixed with your favorite traditional Sala or try it on top of so many other things like tostones, corn on the cob, empanadas, and even tofu !
